Update our Meals Challenge Meal Plan Week 9

The what? Why? and How? of the Challenge


In case anyone wants to join in on making dinner a lot more fun and interesting I'm going to post our meal plan for the week here on Sunday's. I hope some of you join in! Also all the recipes are collected on Pinterest as well. 

Week 9 Meal Plan:

Sunday:  Barbecued Chicken with Corn and Radish Salad

Recipe (not available online from Everyday Food July/August 2004 page 84):
1.) Heat grill to medium. Simmer 1/2 cup ketchup, 1 teaspoon hot sauce, 1/2 cup cider vinegar, 3 tablespoons Dijon mustard, 1/4 cup molasses, 1/2 cup light brown sugar, and 3 minced garlic cloves in a small saucepan over medium heat until reduced to about 1 1/4 cups, 5 to 7 minutes. 2.) In a large bowl toss 1 cut up chicken (3 pounds) with 1 tablespoon vegetable (olive) oil; season well with coarse (kosher) salt and ground pepper 3.) Lightly oil grates; place chicken on grill. Cover grill; cook turning frequently until chicken registers 165degrees (160 degrees for the breast) on an instant read thermometer, 10 to 15 minutes. Uncover grill; continue cooking basting frequently with sauce until chicken is glazed thoroughly, 3 to 4 more minutes. Serve with remaining sauce. 

Monday: Barbecued Pork and Apple Kebabs with Beans and Greens

Tuesday: Green Salad with hard-cooked eggs and bread
(recipe not online Everyday Food July/August 2004 page 63)

Recipe:
1.) Cut 1 large head (about 1 pound) romaine lettuce into bite size pieces; place in a large bowl. Add 1 pint halved grape tomatoes, 3 stalks thinly sliced celery and 6ounces cubed dill-flavored Havarti cheese (about 1 1/2 cups). 2.) In a small bowl, whisk together 1 tablespoon Dijon mustard and 3 tablespoons fresh lemon juice, whisk in 1/4 cup olive oil in a steady stream until emulsified. Season with coarse salt and ground pepper 3.) Pour dressing over salad and toss to combine. Serve topped with Hard cooked eggs


Thursday: Leftover Night

Friday: Pizza Night

Saturday:  Daddy Night because mommy will be at BLOGGY BOOT CAMP CHICAGO!
