Thankful for little people and little bites #AskWisestKid

I am thankful everyday that I have the ability to stay home with my kids. I don’t always love it, sometimes I wish I could go to work for just a few hours, but mostly it’s really awesome. One of the best parts of being home for all four of their childhoods is to see how different they are from each other, and to see how much I have changed.

One of my biggest evolutions as a wife and mother has been in the kitchen. My first son had a sandwich just about everyday once he entered toddlerhood. The two I have at home now, a toddler and a new eater, love hot lunches which is causing me to reach out and try new things.

We recently had a lot of leftover chicken from a Sunday supper where some guests couldn’t make it. I was getting tired of the same old add chicken to pasta, quesidilla, or salad so I asked the Wisest Kid in the Whole World for some ideas. The Campbell’s Kitchen website has pages of delectable mini bites which are perfect for feeding kids! We tried the mini cheesy chicken enchiladas because we had everything in the house.

It was not only a tasty way to use up some leftover chicken, it ended up being a great way to clean up the fridge as it used up the last of our salsa, sour cream and tortillas. Yeah for no food waste! The little ones loved them and so did I! We will be making these again, in fact I frozen several of them to feed the kids before we go to dinner on Thursday. No matter when we plan on eating, the wonderful conversation and fun of having family together makes it later then we
anticipate. With a toddler that is usually five minutes past when she needed to eat! Having a good warm lunch, that’s not too big, before we go out should help with that.
